Özet
Bu araştırma ticari bir mezbahada yürütülmüş, 450 adet sığır, 550 adet kuzu
karkasında karkas kusurları (darbe, kesim kusuru, kızarıklık, kan toplanması,
enjeksiyon, morarma) etlenme, yağlanma durumu, sol yarım karkaslar üzerinden kas
pH’sı, kas ve yağ rengi ölçümleri gerçekleştirilmiştir.
Araştırma bulgularına göre değerlendirmeye alınan kuzu ve sığırlarda kusurlu karkas
oranı sırasıyla %.38.58 ve %.78.23 dür. Kuzu karkaslarında deri çıkarma ve kesim
kaynaklı kusurların %29.92 ile birinci sırada yer aldığı belirlenmiştir. Enjeksiyon izi
yok denecek kadar azdır. Karkas kabuk yağında sarı renk sorunu da çok az düzeydedir.
Sığır karkaslarında boynuz darbesi kaynaklı kusurların %63.10 ile ilk sırada yer
aldığı saptanmıştır. Sığır karkaslarında az da olsa enjeksiyon kaynaklı kusurlar
bulunmaktadır. Karkas kusurlarının karkas üzerinde belirli noktalarda görülme sıklığı
istatistiksel olarak önemli bulunmuştur. Kuzularda kesim kaynaklı kusurlar daha çok
karın bölgesinde yoğunlaşmıştır. Sığırlarda darbelerin kol, butta yüksek oranda olduğu
belirlenmiştir.
This research have been conducted in a commercial abattoir, carcass defects (damage, slaughter disorders, blood splash, hemorrhage, injection, bruises), conformation and fatness status, mesurements of muscle pH, meat and fat colour on left half side carcass have been carried out. According to results, defective carcass rate on evaluated lamb and cattle carcasses were 38.58% and 78.23%, respectively. On lamb carcasses, it was determined that defects caused by skin remove and slaughter were placed on first with 29.92%. Injection trace was not existence. Yellow fat on carcass was very lower. On cattle carcasses, it was determined that defects caused by horn damages were placed on first with 63.10%. However, defects caused injection were exist. Carcass defects were higher on certain part of carcasses. On lambs, defects caused by slaughter were intensed on flank. It was determined that damages were higher on foreleg and leg of cattle.
