Fattening performance and carcass characteristics of Saanen and Bornova male kids under an intensive management system

Twenty kids of Saanen (n = 10) and Bornova (n = 10) breed were individually fattened for 56 days under an intensive management system. Fattening performance, slaughter traits and carcass characteristics were evaluated. Saanen kids had significantly higher average daily gain (161.52 g versus 132.05 g) and daily concentrate intake (851 g versus 725 g) compared to Bornova kids (P < 0.05). Warm carcass yield was found significantly higher (P < 0.05) in Bornova kids compared to Saanen kids (55.19% versus 52.20%). The two breeds differed in some non-carcass parts significantly (P < 0.05). There were no significant differences in body organs and carcass measurements except for leg length and width (P < 0.05). In general, prime cuts did not differ in these breeds significantly but the MLD area was significantly higher in Bornova kids (P < 0.05). Saanen kids had meat of pale and pink colour, which is the most acceptable to consumers.
