Kübik kesilmiş ve soyulmuş domates üretimlerine uygun çeşitlerin belirlenmesi üzerine bir araştırma

Özet
ABSTRAKT Bu araştırma 1994 yılında Mustafakemalpaşa ve Karacabey Tat Konserve Sanayi A.Ş. Fabrikalarının kalite kontrol laboratuvarlannda kübik kesilmiş domates imalatı için uygun olabilecek 15 çeşit ve soyulmuş domates imalatı için uygun olabilecek 12 çeşit kullanılarak gerçekleştirilmiştir. Ham materyal kalitesini belirlemek amacı ile çeşitlerden alınan meyve örneklerinde bazı analizler yapılmıştır. Daha sonra her çeşit ayrı ayrı olmak üzere konservelenmiş ve 9 ay sonra bu konserveler açılarak kimyasal, fiziksel ve duyusal analizler yapılmıştır. Böylece çeşitlerin teknolojik özellikleri ve bu özelliklerin işleme sonrasındaki değişimleri incelenerek, kübik kesilmiş ve soyulmuş domates üretimlerine uygun olan çeşitlerin belirlenmesi amaçlanmıştır. Sonuç olarak XPH 5811, Big Rio 15, Rio Grande, AG 2213, XPH 12091, NDM 055, XPH 12071, XPH 12066, XPH 12047 ve XPH 12068 çeşitlerinin kübik kesilmiş domates üretimine, Rio Grande, XPH 12047, Diana Peel, PSX 5712, XPH 5978 ve Maxillandna çeşitlerinin soyulmuş domates üretimine uygun oldukları belirlenmiştir. ABSTRACT This research was conducted at the quality control laborotories of Mustafakemalpaşa and Karacabey Tat Canning and Industry Factories in 1994 by using 15 varieties which would be suitable for diced tomato production and 12 varieties which would be suitable for peeled tomato production. To determine the raw material quality, quality analysis were made in the fruit samples taken from fields for each variety.Fruits of each variety was then canned separately and nine months later, the cans were opened and chemical, physical and sensory analysis were made. So, it was aimed to determine suitable varieties for diced and peeled tomato productions by using the technological properties of the varieties and the variations of these properties after the processing. At the end of the research, it was concluded that, XPH 5811, Big Rio 15, Rio Grande, AG 2213, XPH 12091,NDM 055, XPH 12071, XPH 12066, XPH 12047, XPH 12068 varieties were suitable for diced tomato production and Rio Grande, XPH 12047, Diana Peel, PSX 5712, XPH 5978, Maxillandna varieties were suitable for peeled tomato production.
