Özet
In this study, application of HACCP in dairy plants in Turkey examines. Factors affecting the decision of dairy plant managers to apply or not to apply the HACCP, expectations of plant managers from the HACCP regarding food safety, problems encountered during the application of the HACCP and suggestions of plant managers evaluate. The research reveal that the most significant problems encountered in the implementation of the HACCP in dairy plants are too many procedures and high cost.
