Özet

Biosensor could be defined as 'a combination of biology and electronics'. In recent years, utility of biosensors for food analysis and food safety are discussed. The pathogen analysis field will expand in the next few years with applications to food safety. In environmental and food analysis, a raise could be expected in biosensor application for some kind of analytes like proteineous toxins, small chemicals and allergens, etc. The integration of electrical engineering, microfabrication and material sciences with biosensor technology could improve to understand the mechanisms of biosensors. In biological and chemical analysis, sample preparation is a typically integral part and this preparation is important for environmental and food analysis. In food industry, new legislation and regulations could open new markets for biosensors, but biosensors would still have to compete with other methods such as gas chromatography and HPLC with certain good analytical characteristics as reliability and their ability for simultaneous analysis of several compounds. Biosensors' major advantages over these technics are their ability to operate in natural samples with little or no pretreatment as well as their ability for on-line performance, in order to facilitate the quality control of products during processing, which is of great importance in the food industry.
