Bursa yöresinde yetiştirilen 'Deveci' armut çeşidinin yöresel olgunluk standartlarının ve depolama durumlarının saptanması üzerinde bir araştırma

Özet
Çalışma, son yıllarda ülkemizde üretim ve depolanan miktarı hızla artan ‘Deveci’ armut çeşidinde yürütülmüştür. Bursa yöresinden 2006 yıllında 5 ve 2007 yılında 3 farklı zamanda hasat edilen meyvelerde olum kalitesini belirlemek için; nişasta dağılımı, meyve eti sertliği, zemin rengi, suda çözünür kuru madde ve asit miktarları belirlenmiştir. İlk yıl 05-13-27 Ekim tarihlerinde, ikinci yıl ise 28 Eylül, 16 Ekim ve 8 Kasım tarihlerinde hasat edilen meyveler 2±0.5oC’de depolanmıştır. Depolanan örneklerde kalite değişimleri, duyusal değerlendirme ve kayıplar incelenmiş, solunum hızı ve etilen salgı miktarları ölçülmüştür. İlk yıl ekim ayının farklı zamanlarında hasat edilen meyvelerin depolama süresince kalite değişimleri benzerlik göstermiştir. Fakat ikinci yıl kasım ayında hasat edilen meyveler, depolama sonunda suda çözünür kuru madde ve duyusal özellikler bakımından olumsuzluklar ve bu yönde eğilimler göstermiştir. ‘Deveci’ armudu ekim ortası ve sonunda hasat edilerek 6 ay başarıyla depolanabilmektedir.
The study is carried out on pear variety ‘Deveci’, which possess an increasing trend during the last few years in Turkey both in respect to production and storage. Fruits harvested at 5 different dates in 2006 and 3 in 2007 were analyzed for starch distribution, firmness, ground color, total soluble solids and acid content in order to assess quality at maturation. In 2006, fruit harvest was made on 05-13 and 27 October and in 2007, on 28 September, 16 October and 8 November and stored at 2±0.5oC. Quality changes, losses, respiration and ethylene rates were determined and sensory evaluation was performed on samples kept in storage. In the first year trial, results proved that fruits harvested on different dates have a similar attitude in respect to quality changes during storage. On the other hand, in the second year, fruit harvested in November displayed negative results in respect to soluble solid content and sensory aspects. The results revealed that ‘Deveci’ pear can be stored successfully for 6 months if harvested in mid or end of October.
