Özet
Bu araştırmanın ana amacı, kiraz üretim aşamasında ortaya çıkan kayıpları etkileyen faktörlerin, saha çalışmasından elde edilen verilerle ortaya konulmasıdır. Araştırma, Türkiye'nin en önemli kiraz üretim merkezlerinden biri olan İzmir'in Kemalpaşa ilçesinde gerçekleştirilmiştir. Araştırmada, işletmelerin ürün kayıplarını etkileyen teknik ve ekonomik özellikleri ile üreticilerin sosyo-ekonomik özellikleri birlikte ele alınmıştır. Araştırmanın verileri farklı oranlarda ürün kaybı yaşayan 79 ve kayıp yaşamayan 23 olmak üzere toplam 102 işletmeciyle yüz yüze yapılan anketler yoluyla elde edilmiştir. İşletmede üretim aşaması, üretim, hasat ve hasat sonrası ürün satışına kadar olan ve ürüne yapılan uygulamaları kapsamaktadır. Üretimde ortaya çıkan kayıpları etkileyen teknik ve ekonomik faktörleri belirlemek için Sıralı Lojistik Regresyon Analizi kullanılmıştır. Modelin sonuçlarına göre, kiraz yetiştirmede üretici deneyiminin artmasıyla kayıp yaşama eğiliminin azaldığı belirlenmiştir. Ayrıca, hastalık ve zararlılar nedeniyle ortaya çıkan kayıpların, soğuk hava deposu eksikliğinden dolayı ortaya çıkan kayıplardan daha fazla olduğu belirlenmiştir. Araştırmada ayrıca, işletmelerin mevcut durumları ile üreticilerin özellikle kiraz üretiminde karşılaştıkları teknik, ekonomik ve pazarlamaya ilişkin sorunları da belirlenmiştir. İşletmelerde yaşanan en önemli teknik sorun ilaçlama, en önemli ekonomik sorun girdi fiyatlarının yüksek oluşu, en önemli pazarlama sorunu ise fiyatın belirlenmesi üzerinde üreticinin etkisinin olmayışıdır.
The main purpose of this research is to determine the factors affecting the losses in the cherry production stage with the data obtained from the survey. The research was carried out in Kemalpaşa district of İzmir province where is one of Turkey's most important cherry production regions. In this research, the technical and economic characteristics affecting the product losses of the enterprises and the socio-economic characteristics of the producers were evaluated together. The data of the study were obtained through face-to-face questionnaires with a total of 102 farmers, 79 of whom lost product losses and 23 of which did not. The production stage in the farms includes production, harvesting and post-harvest applications. Ordered Logistic Regression Analysis was used to determine the technical and economic factors affecting production losses. According to the results of the model, it was determined that loss rates decreased with increasing cherry production experience. In addition, the losses caused by diseases and pests were found to be higher than those caused by the lack of cold storage. In addition, technical, economic and marketing problems faced by farmers in cherry production were also determined. The most important technical problem in farms is disinfection, the most important economic problem is high input prices, and the most important marketing problem is the lack of effect of the farmers on price determination.
