Analysing the composition of fortified foods and supplements: The case of vitamins

This chapter serves as a reference source for those with recent experience of qualitative and quantitative analysis of vitamins contained in a sample of food components of fortified foods and supplements. Emphasis is placed on the scientific basis of particular methods of analysis of foods.
