Özet
Süt proteinleri, proteinlerin doğal dizilimi içerisinde pasif ancak enzimatik hidroliz vyoluyla serbest kalabilen, biyolojik olarak aktif çeşitli bileşenlerin temel kaynağıdır. Bu peptitler yoğurt, diğer fermente süt ürünleri ve peynirde meydana gelebilmektedir. Süt kaynaklı biyoaktif peptitler, antihipertansif, opioid, bağışıklık sistemi düzenleyici, antimikrobiyal, antioksidatif, antitrombotik ve hücre-düzenleyici gibi çeşitli fizyolojik aktiviteler gösterebilmektedir. Bazı biyoaktif peptitler ise diyare, hipertansiyon, tromboz, diş hastalıkları, oksidatif stres, mineral emilim yetersizliği, bağışıklık eksikliği gibi rahatsızlıkların tedavisinde kullanılabilmektedir. Milk proteins are currently the main source of a range of biologically active IVIsubstances which are inactive within the sequence of native protein but can be released by enzymatic hydrolysis. A great variety of naturally formed bioactive peptides have been found in fermented dairy products, such as yoghurt, sour milk and cheese. Milk borne bioactive peptites have been found to exhibit various physiological activities such as antihypertensive, opioid, immunomodulatory antimicrobial, antioxidative, antithrombotic, and cytomodulatory. Such bioactive peptites may find use in the treatment of diarrhea, hypertension, thrombosis, dental carries, oxidative stress, mineral malabsorption, and immunodeficiency. In this review, current knowledge was discussed about bioactive peptides derived from milk proteins, with emphasis on their production, occurrence in fermented dairy products, physiological functionality, multifunctional properties and potential use for health promotion.
